Our objective was to address common challenges like reduced yeast effectiveness and incomplete fermentation, which could lead to suboptimal alcohol content and residual sugars in the final product.

Innovative Solution

Our proposed solution involves a groundbreaking preculture technique. By cultivating a pure strain of wine yeast before introducing it into the grape must, we substantially increased the yeast cell count. This pioneering approach not only eliminated the need for rehydration but also significantly enhanced yeast vitality and viability. As a result, the fermentation process became more thorough and efficient. An additional advantage of this method was the ability to conduct fermentation at lower temperatures, thereby elevating the final beverage's flavor and aroma profile.

Efficient Implementation and Impact

The primary focus of our innovation lies in the meticulous monitoring of sugar concentrations in real-time. In navigating the challenges of fostering robust yeast growth while considering cost and sugar utilization, we successfully managed the Crabtree effect through optimal oxygen supply and precise sugar level control. Our method represents a significant advancement in alcoholic beverage production, allowing for unparalleled real-time sugar concentration monitoring throughout the fermentation process. This not only ensures the highest quality of the final product but also provides valuable insights for process optimization and efficiency.
