Innovative Meat Quality Analysis Using Hyperspectral Fluorescence Measurements

Project Overview

This project involved the development of a contact-free real-time sensor for evaluating microbial contamination on meat surfaces and cutting tools. Addressing a critical need in food safety, the aim was to ensure consistent product quality and hygiene in meat processing.

Innovative Solution

We implemented fluorescence spectroscopy imaging and reflectance-based methodology, using light interactions to analyze meat composition. This approach enabled us to identify changes caused by microbial activity. We utilized advanced chemometrics and statistical methods, including multivariate statistics and artificial neural networks, to accurately interpret hyperspectral data. With our solution it is possible to predict the microbial load of pork and poultry meat surfaces with (best case) 0.3 log cfu accuracy with a 5 mm resolution in real-time.

Efficient Implementation and Impact

The solution provided real-time, efficient contamination assessment without direct contact, maintaining the integrity of the meat. This project exemplifies our firm's expertise in applying innovative technologies for process automation and quality control in food safety, showcasing a significant advancement in maintaining high standards in the food industry.
